Aloo Baingan Recipe

This is a new recipe that I have invented in my mind. We will see if it passes the taste test:



Aloo Baingan Sabzi Recipe
Main items for this recipe are Baingan/eggplant and Aloo/potato:

  • 1 eggplant
  • 2 potatoes

Heat broiler to high. Place whole eggplant on broiler pan and broil, turning every couple minutes, until entire eggplant is charred and soft. Remove and let cool. Peel, cut in chunks and set aside. Cut 2 potatoes into 1” chunks and put in salted water to prevent discolouring.
Heat over medium:
·         Oil -2 tbsp
Add:

  • 1 t. Cumin seeds/jeera
  • 1 t. mustard seeds

When they pop, add and sauté gently, 3-5 minutes:

  • 1 lg Onion, chopped
  • 1 Bell Pepper, chopped– if available
  • 2 T. Green chili, chopped
  • 1 t. Ginger-Garlic paste
  • Salt to taste

Add and cook another 3-5 min:

  • ¼ t. Turmeric powder
  • 2 t. Coriander powder
  • 1 t. Cumin Powder
  • 1 t. Red chilli powder
  • ½ t. garam masala
  • ½-1 t. Spice Hut's 'curry-in-a-hurry' mix
  • 1 can finely diced tomatoes, preferably fire roasted.

 Add eggplant and diced potato. Cover and cook until potatoes are cooked but not mushy (maybe 10 minutes). Remove lid and let simmer, if it’s still too watery.

Add chopped cilantro for garnish
